Winemakers notes ~ We aged this wine in neutral French oak barrels for 32 months, then we moved it to new American oak for one year. This wine is big and structured, from a warm vintage with plenty of ripe fruit and toasty oak from extended aging. Enjoyable now, but will cellar well for 8-10 years.
Tasting notes ~ This Cabernet has a deep burgundy color and complex flavors of ripe fruit and oak that should age very well. Flavors of ripe cherries and amaretto are held together with a thread of creamy vanilla. Intoxicating aromas of baked cherries and toasted oak make this wine entirely too easy to enjoy.
We recommend serving this with pepper-grilled steak, garlic & rosemary roasted potatoes, braised pork shank, or wild game. For dessert, dark chocolate or bleu cheese complement this wine.
